When you turn stuff off, do they come back on automatically the next time the computer is turned off/on ?

Only if they are still set to automatic. There are also some that when set to manual will start with Windows if there is something that requires that service.

How do you find the ones that are not set to manual or auto ?

I wouldn't read too much into it, Racer. I've turned off all the services, applications and programs I don't need or want and I have yet to experience a major problem. By process of elimination you can always fix a mishap that may happen when turning off a service too. If it turns back on by itself that means that somewhere in the program settings it is set to turn on with a windows start, so you'd have to go into the program and change that setting. Don't hesitate to do this stuff, it can save a lot of start up time and processing power.
